This is a brilliant wine for pairing with food as its particularly versatile, here are just some of our suggestions; Aperitif, cold cuts, spring rolls, tapas, (cheeses) brie, vacherin, saint-nectaire, mont-d’or, beaufort, comté et la gamme des gruyères. Also, Fish, crustaceans and seafood gratins.

The Wine

The bourgogne chardonnay fruit comes from a very well situated, 0.6 hectare parcel on a northeast-facing hillside just south of Chassagne-Montrachet. The vines here are now 20 years old. The grapes are handpicked, pressed, left to settle and then naturally fermented on lees for 12 months in small stainless steel vats and some mostly older barrels (there is a tiny percentage of new wood).  The vineyard’s cooler aspect means there is always plenty of freshness in this cuvee. It was in 1968 that Paul Pillot takes over the operation of his father Henry. A few decades later, he is joined by his children, Thierry Chrystelle in 1999 and in 2003 that today are involved with new motivation and energy in the future of the field. The exploited surface extends over 13 hectares of vineyards located mainly in the towns of Chassagne-Montrachet, Saint Aubin and Santenay. Winemaking is 70% in whites and 30% red wines.

Winemakers Notes

We try to respect each of our terroirs to produce the most authentic wines possible. This requires rigorous viticulture without herbicide, tillage and yield control. The vinification takes place in a traditional manner with minimal intervention, a breeding de12 to 18 months in oak barrels (of which 20 to 30% new oak).
