The nose is full of apple pastry and preserved lemon notes, backed by oak spice and oatmeal. The palate is rich and very broad, with a thread of fine acidity.

Lobster. Turbot. Hallibut. Veal and pork dishes.

Production Methods

The style is full, dry and oaked. The vinification process is achieved with pressing without de-stemming. The must was transferred to a thermo-controlled stainless steel tank where it was subjected to settle overnight. The clean must was decanted in a steel tank without temperature control, and the alcoholic fermentation lasted a few days. Decanting for 24 hours in a temperature controlled steel tank. Decanting the alcoholic fermentation for about 1 week. Ageing: about 12 months in French oak barrels, of first and fourth pass, and in steel. Production: from 800 to 1 200 bottles per year.
